Using the solera and criaderas ageing system, they create sherries of depth, complexity, and character. Among their celebrated styles, Amontillado stands out for its distinctive dual aging process, offering both freshness and oxidative richness.
These American oak hogsheads were seasoned with Amontillado sherry for two years, allowing the oak staves to absorb layers of complexity. Amontillado sherry begins its maturation under flor yeast, developing fresh, nutty flavors, before the flor fades, exposing the sherry to oxygen. This oxidative ageing deepens the colour and infuses the wood with rich, nutty, and savory notes, making it an excellent vessel for whisky maturation.
Annandale’s fruit-forward new-make spirit will develop notes of dried figs, raisins, and dates, along with caramel, vanilla, and subtle roasted hazelnuts and almonds.
