  José y Miguel Martín Bodega is a family-run winery in the heart of Jerez, Spain, specializing in the production of fine sherries.   These American Oak hogsheads are seasoned with Palo Cortado sherry, an exceptionally rare and unique style. Palo Cortado begins its life as an Amontillado sherry, aging under a protective layer of yeast known as flor, but then unexpectedly loses its flor, exposing the wine to oxidative aging, similar to Oloroso sherry. This rare transformation results in a sherry that balances the delicate, nutty qualities of Amontillado with the richness and body of Oloroso. Through José y Miguel Martín’s solera maturation system, the sherry gains incredible complexity over time, further enhancing the cask's influence.

  Annandale’s smooth, fruit-driven new-make spirit, when matured in these casks, is expected to produce a single malt of exceptional elegance. Anticipated flavors include toasted almonds, hazelnuts, dried fruits, toffee, and hints of citrus zest, creating a whisky of depth, refinement, and remarkable balance.
