  In the earliest days of Annandale Distillery, our Founder, Professor David Thomson, followed the advice of the late Dr. Jim Swan—affectionately known as ‘The Einstein of Whisky’—by maturing some of our finest spirit in STR casks. These casks were developed by Dr. Jim Swan and Miguel Martin, a renowned Sherry cask supplier in Spain, using a proprietary technique designed to optimize maturation.

  Originating from Burgundy, France, these casks previously held red wines made from Pinot Noir grapes. The casks undergo a meticulous process:

  Shaved to expose fresh oak and reduce harsh tannins.
  Toasted lightly to caramelize the wood sugars, enhancing sweetness and fruitiness.
  Re-Charred to create a fresh layer of charcoal, which acts as a natural filter and imparts roasted, smoky depth.
  This STR process ensures that the casks produce a whisky with rich fruitiness, sweet vanilla undertones, and subtle warmth from cinnamon and clove. Previously bottled STR casks have produced whisky with a distinctive and layered profile, featuring notes of fresh green orchard fruits, creamy richness, and subtle herbal spice. The whisky is floral and perfumed, with hints of Parma violets and red berries, complemented by a fresh menthol palate and candied tropical fruits, creating an elegant and well-balanced dram.

  Annandale Distillery’s STR casks have achieved international recognition. In 2025, Annandale’s Man O'Sword STR Cask 374 was awarded Best in Class and a Gold Medal at the World Whiskies Awards Scotland. In 2023, it received both a Gold and Silver Medal in its category at the San Francisco Spirit Awards, reinforcing the exceptional quality and depth of character found in these casks.
