  Catherine Péré Vergé matures her wines in French oak barrels for 12 to 18 months, allowing the bold blackcurrant and plum flavors of Pomerol’s Merlot to meld seamlessly with the mineral, earthy, and cedar characteristics of the oak. Known for their velvety smooth tannins and robust fruitiness, these casks offer a unique and refined maturation profile for whisky.

  Filled with Annandale Distillery’s orchard fruit-style unpeated new-make spirit, we anticipate a whisky with a rich, smooth mouthfeel, carrying notes of toffee, chocolate, and cinnamon, alongside hints of dark fruit like blackberries.
