  We have sourced exclusive White Châteauneuf-du-Pape barrels from a highly acclaimed but anonymous winery, known for producing some of the finest Grand and Premier Crus in the region. Their approach to winemaking emphasizes hand-harvesting, minimal intervention, and wild fermentation, allowing natural vineyard yeasts to ferment the grapes. With no commitments to growers or buyers, their sole focus is on creating wines of the highest quality, only releasing vintages that meet their exacting standards.

  These French oak casks originate from the Allier and Vosges forests, near Jupilles, and have been personally selected by the winemaker and toasted by Tonnellerie Chassin. Tight-grained oak from these regions allows for a slow, delicate extraction of flavors, ensuring an elegant, refined, and well-balanced maturation, without overwhelming woodiness. The casks were previously used to mature White Châteauneuf-du-Pape wine—primarily made from Roussanne, Grenache Blanc, and Clairette—for 12 to 18 months. This process enhances the whisky’s texture, aromatics, and freshness.
